Mayfair, London
The Rex Deli sits in a restored Grade II listed Queen Anne horse stable in Mayfair. Calshot was brought in to deliver a full interior and exterior fit-out, working closely with Head Chef Lahiru Jayasekara to create a space that felt both considered and practical. The project brought together architectural restoration, joinery, fabrication and modern services into a single, cohesive result.

The building had strong architectural bones but needed careful planning to make it work as a modern hospitality space. The brief was to retain as much original character as possible while meeting strict building, fire and safety regulations. The design began with a watercolour sketch and evolved into detailed CAD drawings by Calshot’s design team.
The project required extensive work to bring the building back to life. Original front doors and brickwork were uncovered and restored. A vintage pavement light, which had been boarded over for decades, was reinstated as a feature of the space. New fire safety systems, mechanical services and structural enhancements were integrated quietly to respect the integrity of the building. Much of the fit-out was created off-site by Calshot and installed within a tight programme to meet operational deadlines.

The interior was designed to work hard without feeling commercial. Reclaimed timber, vintage fittings and bespoke fabricated details were used throughout to create a calm, textured backdrop. Old coffee grinders and repurposed elements were incorporated into the design as subtle references to the building’s layered history. The deli counters, fridges and shelving were designed and built by Calshot to maximise function within the small footprint.
The Rex Deli stands as an example of what can be achieved when craft and design are closely aligned. The space feels permanent but not over-designed, with materials and detailing that reward a second glance. It is more than a hospitality fit-out. It is a working interior shaped by the building’s past and made to meet the demands of daily use.

Tanera Mòr
